Adobo is one of the Philippines’ most beloved traditional dishes, made by simmering chicken or other meats with vinegar,
soy sauce, garlic, black pepper, bay leaves, and other seasonings.

It is traditionally served over rice, but it is also delicious in sandwiches, as a side dish, or enjoyed with drinks.

The Philippines is made up of 7,641 islands, and each region—and even each family—has its own unique way of making adobo. With countless variations passed down through generations, adobo is a true taste of Filipino home cooking and is loved throughout the country.

“Mamita’s Chicken Adobo” was born from Yu Takahashi’s wish to pass on the taste of
her mother’s home cooking to her own children.

Back when elementary schools in Japan still had classes on Saturdays, she would walk home after school and
begin to smell the aroma of adobo as she got closer to the house.
The moment she caught that familiar scent, she would get excited and hurry home.

“Mamita” is the affectionate name her children use for their grandmother.

Inspired by her mother’s original recipe, Mamita’s Chicken Adobo was developed together by Yu Takahashi,
her mother, and Tetsuo Sumimura,President of Sumison Co., Ltd.
